Jardin D'Hiver is a sophisticated Double IPA that bridges the gap between modern haze and crisp precision. It features a lush, fluffy malt base characteristic of New England-style ales, yet utilizes a Cold IPA fermentation process to maintain an exceptionally clean and ester-free profile. At 8.2% ABV, the sensory experience is dominated by an intense, juicy dry-hop character, bursting with tropical fruit and bright citrus notes. This strength is expertly balanced by a lean, dry finish that emphasizes drinkability, ensuring the vibrant hop oils remain the focal point against a neutral, supportive grain backdrop.
Appearance. Deep gold to light orange; hazy to opaque with a moderate-sized, persistent white head that leaves significant lacing.
Aroma. High intensity hop aroma featuring prominent notes of ripe mango, passion fruit, and bright citrus zest. Malt character is low and neutral, providing a clean grainy backdrop. Fermentation is exceptionally clean with no significant esters, allowing a faint, smooth alcohol presence to emerge.
Taste. Initial impression is a saturated burst of tropical and citrus hop flavors. Malt flavor is low but provides a soft, pillowy support. Mouthfeel. Medium body with a notable creaminess and smooth texture from the fluffy malt base. Carbonation is medium-high. A restrained, well-integrated alcohol warmth is present without any harshness or astringency.
