Pouring with a distinct, berry-tinted glow, it delivers an enchanting bouquet of deep, earthy blackcurrant intermingled with the refined oak and grape-like vinous notes of white wine barrels. The house wild yeast breathes life into the profile, contributing a complex, funk-forward tapestry of leather, hay, and lactic sourness. On the palate, the assertive tartness of the dark fruit melds seamlessly with dry tannins and a clean, wood-kissed finish, making for an elegant, deeply refreshing transition between seasons.
Appearance. Hazy, deep reddish-purple to dark ruby color with a pink-tinted, delicate foam head that recedes relatively quickly, leaving light lacing.
Aroma. High intensity; vibrant aromatics of fresh blackcurrant, dark berry skins, and white wine grapes. Underpinned by a complex wild yeast character showing earthy funk, damp hay, barnyard leather, and a sharp lactic tartness, balanced by soft, vanillin-tinged French oak wood notes.
Taste. Vibrant, tart blackcurrant flavor dominates initially, dry and devoid of heavy sweetness. High lactic acidity is bright and crisp, elevating the dark fruit character. Mid-palate introduces complex Brettanomyces funk, soft white wine must, and dry wood tannins. Finishes bone-dry and clean, with a lingering, refreshing berry-skin tartness and delicate oak.
Mouthfeel. Medium-light body, highly attenuated and dry. High carbonation provides a lively, effervescent spritz. Light, pleasant astringency from fruit skins and barrel tannins enhances the dryness, with no perceptible alcohol warmth.
