Selva Fosca is a rustic American Stout that emphasizes the darker, toasted end of the malt spectrum. The sensory experience is defined by an intense roasted malt profile, characterized by aromas of coffee and torrefied grains. On the palate, it delivers a unique flavor of toasted almond skin complemented by subtle, wispy traces of smoke. Despite its robust 6.5% ABV, the alcohol is exceptionally well-integrated, offering a smooth finish without perceived heat. Appearance.Very dark brown to near-black (35–40 SRM), appearing largely opaque. Features a creamy, beige-colored head with moderate retention, fine bubbles, and a light Brussels lace as it recedes.
Aroma.High intensity roasted malt aroma with prominent notes of dark chocolate and roasted coffee. A distinct toasted, nut-like character is present. Hop aroma is very low, with only a faint resinous hint. No significant yeast esters or alcohol sharpness.
Taste.Deeply roasted initial impression featuring bittersweet chocolate and coffee grounds. Mid-palate introduces a specific toasted almond skin flavor and a light touch of smoke. Bitterness is moderate-high, derived from both hops and roasted grains. The finish is remarkably dry and clean with a lingering, slightly burnt grain aftertaste.
