La Débauche The Fall is a decadent English Barley Wine that showcases the profound influence of Bimber bourbon barrel aging. The sensory profile opens with a deep, bready cereal richness and intense toffee, seamlessly blended with aromatic layers of Madagascar vanilla and toasted oak. At 12% ABV, the palate is exceptionally full and chewy, delivering a luxurious, velvety texture. Complex dark fruit esters of plum and raisin emerge alongside a gentle, earthy hop character, while the spirituous warmth of the bourbon provides a sophisticated, warming finish. This is a bold, multi-layered sipper where malt sweetness and woody vanillins achieve a harmonious, vinous equilibrium.
Appearance. Deep mahogany to dark brown with brilliant clarity and visible ruby highlights. Pours with a thin, creamy, off-white head that shows low retention but leaves significant legs on the glass due to high viscosity and alcohol content.
Aroma. High intensity with a very rich, bready, and toasty malt profile. Strong notes of toffee and caramel are complemented by pronounced vanilla and charred oak from the bourbon barrels. Moderate dark fruit esters reminiscent of dried figs and plums, with a very low, earthy hop presence and a soft, well-integrated alcohol warmth.
Taste. Initial impression is a massive, complex malty sweetness featuring layers of biscuit, toasted bread, and deep toffee. Mid-palate introduces lush vanilla, coconut, and oak tannins from the Bimber barrels. Hop bitterness is low to moderate, providing just enough balance against the malt. Significant dark fruit flavors persist into a long, moderately sweet, and slightly vinous finish with a lingering bourbon-soaked character.
Mouthfeel. Full-bodied and chewy with a thick, luscious, and velvety texture. Carbonation is low to moderate. A smooth, prominent alcohol warmth is present but remains rounded and pleasant without being hot or fusel. Low astringency.
