La Calavera Unearth presents a sophisticated Straight Sour Beer profile enhanced by aging in whisky barrels. A vibrant, clean lactic acidity takes center stage, reminiscent of fresh lemon and tart green apple. This sharpness is grounded by a crackery pale malt backbone that carries nuanced notes of toasted oak and a ghostly whisper of vanilla derived from the spirit cask. The barrel maturation adds a layer of structural depth to the fermentation profile, smoothing the edges of the bright, citrusy esters. It finishes crisp and bone-dry, with a lingering acidic brightness that balances the subtle, spirit-driven complexity and moderate alcohol presence.
Appearance. Straw to pale gold (3-4 SRM). Large, dense, white head with poor retention typical of high-acidity styles. Slight haze from barrel conditioning and effervescent bubbles.
Aroma. High intensity of clean lactic sourness dominating the nose, followed by moderate fruity esters of lemon and tart apple. The malt character is crackery and biscuity, overlaid with subtle toasted oak, light vanilla, and a faint grain-like whisky presence. No hop aroma.
Taste. Clean, sharp lactic sourness is the primary impression, complemented by a bready and crackery malt base. Flavors of tart lemon and green apple are prominent. Hop bitterness is undetectable, allowing the barrel-driven wood tannins and a hint of spirit character to provide structure. Finishes very dry and crisp with a lingering acidic snap. No hop flavor.
Mouthfeel. Medium-light body with high carbonation that enhances the perceived acidity. A noticeable but well-integrated alcohol warmth from the whisky barrel influence. Crisp acidity without harsh astringency.
