L'Ermitage Elder Mother

A sophisticated Wild Specialty Beer that marries the delicate, muscat-like perfume of wild elderflowers with a complex indigenous fermentation. The 6.3% ABV provides a sturdy backbone for the floral and botanical layers to unfold. Two and a half months in oak barrels imparts a subtle tannic structure and soft woody notes that ground the bright, lactic acidity. Aromas of lychee and white grapes lead into a palate defined by funky yeast character and a crisp, dry finish. It is an elegant expression of seasonal harvest and mixed-culture brewing, balancing rustic wild traits with refined floral elegance.
Appearance. Pale straw to golden hue (SRM 3-5). Displays a slight haze characteristic of wild fermentation. Pours with a white, effervescent head that dissipates relatively quickly to a thin ring, leaving minimal lacing due to the low pH and barrel aging.
Aroma. High intensity and complex. Dominant floral notes of fresh elderflower suggest white grape, lychee, and elderberry. This is supported by a moderate wild funk featuring earthy, hay-like, and slightly leathery Brettanomyces traits. Subtle oak-derived vanilla and a clean lactic tartness provide a bright, inviting nose.
Taste. The initial impression is a sharp but balanced lactic acidity. Prominent elderflower flavors mirror the aroma with floral and tropical fruit nuances. The malt profile is minimal, providing just enough cracker-like base to support the wild character. Mid-palate reveals light oak tannins and a touch of farmhouse funk. The finish is bone-dry and clean, with a lingering botanical floral aftertaste.
Mouthfeel. Medium-light body with a high, prickly carbonation that enhances the perception of dryness. Very low alcohol warmth, well-integrated at 6.3%. A slight tannic astringency from the oak barrels and elderflowers adds structure without being harsh.
