Driven by the soft mineral profile of Ourense water and a meticulous triple fermentation process, it delivers a clean, high-gravity experience. The profile is defined by delicate floral honey notes and a bracingly dry finish, free from residual sugars. Despite its 12.5% ABV, the alcohol remains well-integrated, providing a gentle, sophisticated warmth. The lack of carbonation emphasizes its wine-like structure, allowing the purity of the honey and the crisp, clear character of the fermentation to take center stage without distraction.
Appearance. Color ranges from pale straw to medium gold (SRM 2–5). Brilliant clarity with no visible sediment. As a traditional dry mead, it typically lacks a foam head and presents as a still liquid with no lacing.
Aroma. Moderate to high intensity of honey aroma, featuring floral and slightly herbaceous notes. The scent is clean, lacking yeast-derived esters or phenols, with a subtle, sophisticated alcohol presence. No hop or malt character is present.
Taste. Initial impression is starkly dry with a clean, floral honey flavor. It lacks hop bitterness and malt presence. The fermentation character is very clean, finishing with a lingering, crisp dryness and a noticeable but smooth alcoholic warmth. A faint mineral quality from the water provides structural balance.
Mouthfeel. Medium-light to medium body, reflecting its high attenuation and dry nature. Carbonation is still or very low. Significant alcohol warmth is present but well-integrated, providing a smooth, wine-like texture without astringency or harshness.
