Jester King Mr Mingo

The inspiration was to make a simple beer with a subtle adjunct.

To make Mr. Mingo, we brewed a simple saison with barley and wheat from Blacklands Malt and raw Texas Hill Country water from our onsite well. We added hibiscus flowers at the end of the boil and then later dry hopped with more. In total, we used around 1 pound of hibiscus per barrel.

But don’t let the simplicity of the recipe and concept belie the complexity of the beer. Mr. Mingo is fermented in stainless steel with our mixed culture brewers yeast and naturally-occurring yeast from our land. It’s refreshing, effervescent, slightly herbal, mildly tart, and overall very drinkable. Most importantly, it’s uniquely tied with the Texas Hill Country, the summer months, and the people of Jester King.

Light, dry, drinkable, mildly tart, and slightly herbaceous.
