Doom Forge is a masterful Imperial Coffee Stout that highlights a sophisticated interplay between specialty malts and artisan coffee. The foundation features Blacklands Malt Pale Moon Malt alongside a complex grist of caramel, brown, chocolate, and black malts, creating a deep obsidian base. The infusion of Ethiopia Guji Sere Saba Natural and Kenya Mehotoro Estate AB coffees introduces vibrant notes of dark berries and bright citrus acidity, lifting the heavy roasted character. Fermented cleanly with California Ale yeast, the profile remains focused on the rich cocoa and espresso elements. It is a velvety, full-bodied experience that balances intense roast with nuanced fruit complexity.
Appearance. Opaque, midnight black (40+ SRM) with a thick, creamy, dark tan head that exhibits excellent persistence and leaves dense lacing.
Aroma. High intensity aroma of freshly roasted coffee, characterized by distinct blueberry and black currant notes from the Ethiopian beans. Deep layers of dark chocolate, espresso, and toasted grain are supported by a clean, neutral fermentation profile.
Taste. Initial flavors of bittersweet chocolate and heavy roast are quickly met by the bright, acidic fruitiness of the Kenyan coffee. The Pale Moon Malt provides a sturdy, bready backbone. Firm bitterness from both hops and roasted grains leads to a long, drying finish with lingering notes of cold-brew coffee and charred oak.
Mouthfeel. Full-bodied and viscous with a smooth, velvety texture provided by flaked oats. Moderate carbonation with a noticeable, well-integrated alcohol warmth that enhances the sipping experience without being harsh.
