Atrial Rubicite is a vivid showcase of Texas Hill Country terroir, merging native yeast and souring bacteria with an overwhelming abundance of raspberries. This Brett Beer offers a sensory journey starting with an intense, jammy fruit profile that dominates the senses. The wild fermentation introduces nuanced layers of earthy funk, wet hay, and stone fruit, which complement the crisp wheat and barley base. With its bone-dry finish and bright, lactic acidity, the beer balances concentrated berry sweetness with a rustic, farmhouse complexity. It is an unfiltered, lively, and deeply expressive representation of wild fermentation and fruit integration.

Appearance. Deep crimson to brilliant ruby with a persistent, mousse-like pink head. Unfiltered and slightly hazy with noticeable lacing.

Aroma. High intensity. Dominant jammy raspberry aroma layered over rustic funk, including wet hay and light barnyard notes from native yeast. Subtle wheat malt sweetness and stone fruit esters are present, without hop character.

Taste. Intensely fruity with fresh raspberry pulp and skin flavors. Sharp but clean lactic acidity provides a tart initial impression. The malt is a supportive, crackery wheat backdrop. Very dry finish with lingering fruit tartness and a touch of earthy funk. No perceptible hop bitterness.

Mouthfeel. Medium-light body with a crisp, refreshing texture. High carbonation from bottle conditioning provides a lively, effervescent scrub. Low alcohol warmth and very slight tannin-like astringency from fruit skins.
