The palate is defined by bright lactic acidity and a touch of honey malt sweetness, providing a delicate counterpoint to the sharp, fruit-forward tartness. Its refined, spritzy carbonation enhances the vibrant vinous notes, leading into a bone-dry and crisp finish that highlights the intricate results of its six-month bottle conditioning.
Appearance. Straw to light gold (3-4 SRM). Displays a large, dense white head with moderate to low retention due to acidity; slight haze may be present from mixed culture conditioning.
Aroma. High intensity with a dominant clean white grape and vinous character. A sharp lactic sourness is complemented by a hint of rustic farmhouse funk and very low honey-like malt sweetness. No hop aroma is present.
Taste. Initial impression is a bright, lemony lactic sourness followed by a distinct Riesling grape flavor. A soft crackery malt profile is enhanced by a touch of honey malt sweetness. Hop bitterness is undetectable. The finish is exceptionally dry and clean, with lingering tart apple and floral wine notes.
Mouthfeel. Medium-light body with high, spritzy carbonation that provides a lively, effervescent sensation. Low alcohol warmth is well-integrated, with no significant astringency despite the barrel aging.
