Flash Freeze is an intensely aromatic Wild Specialty Beer that delivers a bracing sensory experience. Built on a crisp base of Heidelberg and Wheat malt, it leverages Philly Sour yeast to produce a sharp, clean lactic acidity. The profile is defined by a bold collision of botanicals and fruit; bergamot from Earl Grey tea provides a floral, citrus-forward perfume that melds seamlessly with the pungent, herbal zing of Kaffir leaves. Lush apricot puree adds a soft stone-fruit fleshiness that rounds out the mid-palate, though the beer remains aggressively tart and refreshing with a bone-dry, tea-tannin finish.

Appearance. Pours a hazy, pale orange-gold (SRM 5–7) with a fine, white head that dissipates fairly quickly, leaving a thin collar and minimal lacing.

Aroma. High aromatic intensity featuring dominant notes of bergamot and citrusy Kaffir leaves. Secondary aromas of ripe apricot and a clean, sharp lactic sourness are present, supported by a very light, bready malt background.

Taste. Initial impression is sharply tart and citrusy. Flavors of lime zest and floral bergamot lead, followed by the tangy sweetness of apricot. The malt flavor is minimal, resembling crackers or raw grain. Finishes very dry and crisp with a lingering herbal tea character and bright acidity; hop bitterness is nearly imperceptible.

Mouthfeel. Medium-light body with high carbonation that enhances the sharp acidity. There is a slight tannic astringency from the tea and fruit skins, creating a puckering but refreshing sensation without any alcohol warmth.
