Ripe banana puree dominates the sensory profile, complemented by the creamy, vanilla-tinged sweetness of ice cream powder and lactose. The Philly Sour yeast provides a bright, clean lactic acidity that prevents the maltodextrin-enhanced sweetness from becoming cloying. This collaboration captures a smoothie-like character where tropical fruit esters and confectionery notes converge into a rich, dessert-forward experience with a refreshing, tart finish.
Appearance. SRM 3–5. Opaque and turbid straw to pale gold hue, resembling a fruit smoothie. The head is white, showing moderate initial foam but fading quickly to a thin collar with minimal lacing due to high adjunct content.
Aroma. High intensity of ripe, sugared banana and sweet cream. A distinct lactic tartness provides a zesty backdrop. Malt character is low, obscured by the fruit, though a faint doughy sweetness persists. No hop aroma is present. Yeast esters of red apple and stone fruit emerge from the Philly Sour fermentation.
Taste. The initial impression is a burst of sweet banana puree and vanilla-like dairy notes. Mid-palate, a firm but clean lactic sourness provides necessary balance. The complex malt bill of Golden Promise and oats adds a soft, bready depth. Hop bitterness is very low, providing no significant interference. The finish is lingering and sweet, characterized by a creamy mouth-coating of lactose and persistent tropical fruit.
Mouthfeel. Medium-full to full body with a thick, velvety, and smoothie-like texture. Carbonation is moderate. Alcohol warmth is light and well-integrated at 6% ABV. Significant creaminess from the ice cream powder and maltodextrin, with no perceived astringency.
