Pilgrimage is a refined take on the traditional Weissbier, emphasizing a precise balance between yeast character and high-quality German grains. The grist, composed of 60% German malted wheat and 40% German pilsner malt, provides a soft, doughy foundation with a subtle grainy sweetness. Fermented cool to ensure a sophisticated profile, it delivers elegant notes of clove and ripe banana. A light addition of German Tettnang hops introduces a delicate herbal nuance that complements the beer’s effervescent nature. This highly carbonated, pale gold ale concludes with a crisp, dry finish, embodying the refreshing, fluffy elegance of a classic Bavarian hefeweizen.
Appearance. Pale straw to light gold (3-4 SRM). Hazy with a luminous quality from the wheat and yeast. Features a very thick, moussy, and long-lasting white head with excellent lacing.
Aroma. Moderate intensity with a classic balance of banana esters and spicy clove phenols. Strong bready and doughy wheat presence is supported by a light grainy-sweet pilsner malt character and a faint herbal hop note from the Tettnang.
Taste. A soft, bready wheat flavor leads the palate, followed by a light grainy sweetness. The fermentation profile provides well-integrated banana and clove notes that are flavorful without being overbearing. Bitterness is very low, allowing the malt and yeast to shine before transitioning into a clean, relatively dry, and refreshing finish.
Mouthfeel. Medium body with a characteristic fluffy and creamy fullness. Very high carbonation provides a spritzy, effervescent sensation. No astringency or alcohol warmth.
