Holy Goat is een brouwerij in Dundee die gespecialiseerd is in de productie van bieren van gemengde gisting en houtgerijpte bieren.
Ze hebben gekozen voor een onconventionele benadering van gist en fermentatie, waarbij ze hebben gekozen voor een gepatenteerde methode die Brettanomyces-gist gebruikt voor lange rijpingstijden (meestal 3-4 maanden) om uniek, complex en vol smakend zuur bier te produceren.
Gemengde fermentatie verwijst naar het gebruik van onconventionele gisten en bacteriën bij het brouwen, waardoor bieren met een uniek karakter kunnen worden geproduceerd. Ze worden gedreven door experimenten en zijn geobsedeerd door de geweldige smaken die kunnen worden bereikt met fermentaties in gemengde cultuur.
Geïnspireerd door traditie, willen ze ook hulde brengen aan hun brouwersvoorouders, door oude en nieuwe technieken te mengen met ingrediënten van de hoogste kwaliteit om complex, interessant en (vooral) smakelijk bier te produceren!
De naam van de brouwerij verwijst naar de ironische beschrijving van de ‘geit’-achtige eigenschappen van wilde gist (Brettanomyces) kenmerken. Een eerbied voor deze gist en voor de bieren die deze kenmerken vertonen, is een sterk onderdeel van de identiteit van de brouwerij.
