This Flanders Red Ale is a masterful blend of young and mature stocks, showcasing the complex interplay between bright acidity and deep barrel character. Aging 20% of the blend in Calvados oak barrels imparts a sophisticated spirit character reminiscent of Hungarian palinka, offering notes of apple brandy and vanilla. This base is further elevated by an intensive addition of fresh Scottish Victoria plums, which contribute layers of succulent stone fruit, skin-led tannins, and a vibrant tartness. The result is a wine-like, deeply aromatic ale where toasty malts support a sharp, fruit-forward acidity and a dry, oak-inflected finish.

Appearance. Deep burgundy to ruby red with excellent clarity. Topped by a thin, pale tan head with moderate retention and light lacing.

Aroma. High intensity aromatic profile dominated by ripe Victoria plums and red currants. A notable spirituous character from Calvados barrels provides hints of apple brandy and soft vanilla. Supporting malt notes of toasted bread and light chocolate are present, alongside a moderate, clean acetic sharpness and fruity esters. No hop aroma.

Taste. Initial sharp, prickly acidity gives way to a rich, complex fruit profile featuring the tart sweetness of Victoria plums and black cherry. The Calvados oak influence provides a subtle spirit-like depth and tannic structure. Toasty malt flavors provide a sturdy backbone, balancing the high acidity. The finish is dry and wine-like, with lingering notes of fruit skins and oak. Bitterness is very low.

Mouthfeel. Medium body with a slightly syrupy texture that is cut by moderate carbonation. Noticeable alcohol warmth from the 7.5% ABV is well-integrated. Low to moderate astringency from the plum skins and oak tannins creates a structured, wine-like palate.

Holy Goat Brewing aus Dundee in Schottland ist eine Kleinstbrauerei mit eigenem Taproom, die sich auf mixed fermentation und Fasslagerungen, sprich Sauerbiere und Stouts, spezialisiert haben. Das Crimson Fang entstand in Zusammenarbeit mit Heist Brew aus England und ist dem ungarischen Obstbrand Palinka nachempfunden. Dazu haben sie vier Teile junges Flanders Red gebraut und mit einem Teil in Calvados-Fässern gelagertes älteres Bier geblendet. Dieses Grundbier wurde wiederum mit einer Basis aus lokalen Pflaumen verschnitten, was zusammen mit den typischen Grundzügen vom Flanders Red Ale eine trockene, dennoch fruchtige und dunkle Aromatik ergibt.

Brewed in collaboration with our friends at Heist Brew Co we took inspiration from Hungarian palinka to produce this Flanders Red style beer. We blended 80% provision strength ‘young’ stock beer aged in steel, with around 20% ‘mature’ stock beer aged in Calvados oak barrels. We used these brandy barrels to provide spirit character reminiscent of the palinka.

This blended base was transferred onto 250g/l of 2022 harvest of Victoria plums, sourced from Pittormie fruit farm, located seven miles from the brewery.

Drink now or age, this will get weirder.

Originally brewed in collaboration with our friends at Heist Brew Co, Crimson Fang is a palinka inspired barrel aged Flanders Red style beer, aged on Scottish plums. For this single barrel version, we took a portion of Crimson Fang and aged it in a fresh Calvados barrel for a further 6 months. To this barrel we added 40kg of locally grown Victoria plums of which about a quarter were smoked over wine staves. Bottle Conditioned.
