This Belgian-inspired Saison is a masterclass in rustic elegance, showcasing the soft textures of Organic Vermont wheat against a backdrop of American malted barley. The distinctive Hill Farmstead farmhouse yeast drives the profile, imparting a bright tapestry of lemon zest, white pepper, and subtle stone fruit. A blend of European and American hops adds a delicate floral and earthy counterpoint without overshadowing the grain's freshness. Unfiltered and naturally carbonated, it pours with a soft cloudiness and an effervescent life. The finish is remarkably dry and crisp, leaving a lingering, spicy yeast character and a clean, mineral-tinged refreshment derived from the brewery's well water.

Appearance. SRM 4-6. Hazy, pale straw to light gold. Dense, persistent rocky white head with exceptional Belgian lacing. Highly effervescent with visible carbonation.

Aroma. High intensity. Prominent fruity esters of lemon, pear, and green apple, complemented by moderate spicy notes of cracked black pepper. Soft, grainy, bready malt aroma from the wheat. Low floral and earthy hop character. Clean, rustic fermentation profile.

Taste. Initial soft, grainy wheat sweetness transitions into a complex fermentation profile of citrus and spice. Hop bitterness is moderate but firm, accentuating the very dry, crisp finish. Low earthy and herbal hop flavor. Highly attenuated with a refreshing, spicy aftertaste and no lingering sweetness.

Mouthfeel. Medium-light body with a soft, creamy texture provided by the high wheat content. Very high carbonation provides a lively, effervescent palate scrub. Minimal alcohol warmth. No astringency.
