This delicate Specialty Cider presents a harmonious blend of locally sourced apples and fragrant elderflower. Inspired by the Haudenosaunee philosophy of sustainability, it captures the essence of the landscape through a refined infusion process. The sensory profile is defined by the perfume of fresh elderflower blossoms, reminiscent of Muscat grapes and honey, layered over a crisp, juicy base of orchard apples. Bottle conditioning introduces a gentle, natural effervescence that lifts the floral aromatics. It offers a clean, refreshing experience with a balanced sweetness derived from fresh apple juice, culminating in a bright and lively finish that highlights its natural ingredients.
Appearance. Pale straw to light gold (SRM 2-3). Brilliant clarity to a very slight haze from bottle conditioning. Pours with a light, fleeting white head and a delicate sparkle.
Aroma. High intensity of floral elderflower with distinct notes of lychee and honey. Complementary fresh apple character, reminiscent of green skins and sweet pressed juice. Clean fermentation with no sulfur or phenols.
