This collaboration between Boerenerf and Nevel blends young and old lambics with a rustic oat saison aged for eight months in lambic barrels. The result is a vibrant sensory profile where the earthy, bready qualities of the oats meet the assertive lactic tartness and complex barnyard funk characteristic of a Lambic. Aromas of hay, citrus rind, and horse blanket lead into a palate of sharp acidity, softened slightly by the silkier texture of the farmhouse base. A bone-dry finish and subtle oak tannins provide a refined, farm-grown elegance.
Appearance.SRM 4–6. Deep golden in color with a slight haze due to the use of oats and wild fermentation. The white head exhibits poor to moderate retention, typical of the style's acidity.
Aroma.High intensity with dominant lactic sourness and complex wild funk, including barnyard, hay, and horsey notes. A light bready, grainy malt character from the oats and wheat is present, alongside citrus rind and rhubarb fruitiness. No hop aroma.
