This Wild Specialty Beer presents a vibrant sensory journey led by a dominant, tart raspberry profile reminiscent of a dry framboise. Nine months of aging on fruit and in oak barrels imparts a sophisticated complexity, blending huge berry aromatics with subtle, underlying apple notes. The wild fermentation provides a sharp, refreshing acidity that cuts through the fruit, while the wood aging contributes a round, smooth finish with delicate oak tannins. Expect a crisp, effervescent character that balances the intense fruitiness with an earthy, funky depth typical of the brewery's wild-fermented style, finishing bone-dry and elegantly refined.
Appearance. A striking deep pink to reddish-ruby hue; pours with a moderate, light-pink head that dissipates fairly quickly. Clarity ranges from clear to a soft, attractive haze from the significant raspberry addition.
Aroma. High intensity aromatics of fresh, tart raspberries dominate. Secondary notes of green apple and rustic oak are present, accompanied by a clean lactic sourness and a moderate wild funk characterized by earthy and hay-like yeast traits.
