Hawkes Cyser

Two of the longest-lived drinks in the world, fused by two of London’s revolutionaries. Working alongside mead-masters Gosnells, we harmonized a 2018 vintage Dabinett with a blend of British honey based mead. This bittersweet mash-up is a journey into the fruits of the orchard and of the hive. A late dry hop brings lush aroma, opening up to a palate of baked apple and honey sweetness, with a lash of moreish tannins at the finish. This is cider meets mead, a bond between makers.
