This Wild Specialty Beer offers a vibrant sensory experience, pairing the tropical, tart essence of kiwi with a bright lime character. The aroma is led by zesty lime citrus and the distinct, gooseberry-like tang of kiwi fruit, supported by a subtle wild fermentation profile. On the palate, an electrifying lactic acidity provides a sharp, refreshing backbone that highlights the fruit's natural zest. The finish is remarkably clean and dry, showcasing a harmonious balance between the citrus pith and the delicate underlying funk of a nimble wild ale, maintaining a bright and spirited profile throughout the sip.
Appearance. SRM 3-5. Pale straw with a faint greenish-gold hue; hazy clarity with a frothy white head that shows moderate retention and fine lacing.
Aroma. High intensity of fresh lime zest and lime juice. Secondary notes of ripe kiwi, reminiscent of tart green gooseberries. Light lactic acidity and a very low, clean earthy funk from wild fermentation; no hop or malt-derived aromatics.
Taste. Sharp, clean lactic sourness is the initial impression. Dominant flavors of bright lime pith and tart kiwi fruit. Very low crackery malt flavor. Bitterness is nearly absent, as acidity provides the balance. Finishes bone-dry and crisp with a lingering citrus zest aftertaste.
Mouthfeel. Medium-light body with a soft, slightly fluffy texture. High carbonation provides a lively, prickly sensation. No alcohol warmth or astringency; the high acidity creates a clean, mouth-watering finish.
