A masterfully executed Straight Sour Beer, this blend marries the robust, toasted character of Rulles Brune with the sharp, acidic vitality of one-year-old lambics. Matured for eight months in oak barrels, the sensory profile is defined by a striking contrast between dark, bready malts and a bright, lemony lactic sourness. The nose is greeted with vinous notes of tart apple and dark fruit, underscored by a subtle, earthy wood character. On the palate, the complex interplay of cocoa and biscuit notes from the Brune base is cut by a crisp acidity, leading to a bone-dry, effervescent finish that remains remarkably refreshing despite its depth.
Appearance. Deep mahogany with ruby highlights; clear to slightly hazy. Dense, tan-colored head with moderate retention and light lacing.
Aroma. High intensity lactic sourness with notes of lemon zest and tart green apple. Subtle malt complexity featuring toasted bread and light cocoa, complemented by a woody, vinous oak character. No hop aroma.
Taste. Sharp, clean lactic acidity dominates initially, supported by a rich malt backbone of biscuit and dark grain. Flavors of tart cherry and citrus are present. Hop bitterness is undetectable, with the balance firmly on the acidic side. Finishes very dry and crisp with a lingering tartness and faint oak tannin.
Mouthfeel. Medium body with high carbonation providing a prickly, lively sensation. Noticeable but well-integrated alcohol warmth. Low astringency.
