Gueuzerie Tilquin

This specialized Gueuze presents a sophisticated marriage of traditional Belgian spontaneous fermentation and the rugged influence of peated Scotch whisky barrels. A vibrant, sharp acidity leads the experience, underpinned by Tilquin’s signature refined funk of leather and wet hay. The integration of one, two, and three-year-old lambics provides a complex base of lemon zest and green apple, which is transformed by a persistent thread of earthy smoke, iodine, and medicinal peat. Effervescent and bone-dry, it balances the wild, funky character of a classic Gueuze with the charred oak and saline depth of Islay-style spirits for a truly singular, lingering sensory journey.

Appearance. Deep golden color (6 SRM) with brilliant clarity. Features a thick, rocky, mousse-like white head with exceptional retention and delicate lacing. Highly effervescent with visible rising carbonation.

Aroma. High intensity. A sharp lactic sourness and complex funk—horse blanket, leather, and earth—are immediately present. These traditional notes are layered with a distinct medicinal peat smoke and campfire ash from the whisky barrels. Supporting notes of lemon rind, rhubarb, and a light, bready wheat malt background.

Taste. Initial impression is sharply sour and bracingly dry. Flavors of tart lemon and green apple transition into a complex mid-palate of funky barnyard and aged oak. The peated Scotch barrels contribute a significant smoky, woody, and slightly saline character. Bitterness is nearly absent; balance is achieved through acidity and smoke. Finish is exceptionally clean, bone-dry, and tartly lingering.

Mouthfeel. Medium-light body with a prickly, high carbonation. Notable tart, puckering quality that remains crisp rather than astringent. A light, well-integrated alcohol warmth is present, reflecting the 7.3% ABV.
