This elegant Fruit Lambic showcases a vibrant sensory profile defined by the addition of 270 grams per liter of rare Schaerbeek cherries. Utilizing a base of low-gravity Meerts blended with one and two-year-old lambics, this draft version delivers a bright, approachable complexity. Aromas of rustic barnyard funk and dusty hay harmonize with intense, fermented sour cherry notes. On the palate, sharp lactic acidity provides a crisp framework for the earthy, tannic fruit character and a subtle, almond-like presence from the cherry pits. The experience is remarkably dry, effervescent, and refreshing, concluding with a clean, lingering tartness.

Appearance. Deep ruby to burgundy color (15–25 SRM) with a hazy, unfiltered clarity. Pours with a dense, pink-tinted head that exhibits moderate retention and light lacing.

Aroma. High intensity featuring dominant fermented Schaerbeek cherries and complex Brettanomyces-driven funk, including horse blanket, wet hay, and goaty notes. Moderate lactic acidity; no hop aroma and minimal bready malt character.

Taste. Initial impression is sharply tart and puckering. Strong, authentic fermented cherry flavor with a pleasant tannic edge and stone-fruit depth. No hop flavor or perceptible bitterness. Fermentation character is bone-dry and acidic with layered wild yeast funk. The finish is short, clean, and exceptionally dry.

Mouthfeel. Light to medium-light body with a lean, refreshing texture. Carbonation is high and lively, enhanced by keg refermentation. Minimal alcohol warmth and a moderate, fruit-derived astringency.
