Puede parecer simple la explicación dada pero la idea surge del interés por mi parte de recobrar las cosas que tradicionalmente habían supuesto en mi niñez un hábito por lo ‘hecho en casa’, dando lugar a una necesidad por ‘enseñar’ a mis hijos todo aquello que al pasar los años, y alejarnos de las áreas rurales, no habían vivido tal y como lo hice yo cuando era niño.
De esa forma comencé a realizar bollería tradicional Segoviana (tal y como me la hacía mi abuela), continué retomando la confección de chorizos, salchichones, lomos, patés y otra serie de cosas, antaño hechas en la cocina de casa a mano con ese toque inconfundible de sabor olor y calidad, hoy en día prácticamente perdido. También me influyo mi padre, ya que confeccionaba por aquella época licores de café, naranja, pacharanes utilizando las endrinas del jardín.
Así pase a la confección de cerveza casera, que, sin haber sido elaborada en nuestra casa fue el siguiente paso. Ahí tuvo mucho que ver mi hermano que adquirió un equipo casero de fermentación, pasando ambos a confeccionar las recetas belgas con sirope en lata (fáciles de elaborar). Esto se remonta al año 1997 y durante todos estos años hemos ido perfeccionando los métodos de elaboración, aumentando la producción debido a la demanda existente en la familia, pasando de elaborar cantidades que rondaban los 12 litros a los 150 de los últimos años y de reutilizar botellas de 20 y 33 cl a las botellas de cava, a los barriles de 5 litros y finalmente a barriles de 30 litros. Durante éstos últimos años he contando con la ayuda del maestro cervecero Boris de Mesones, único juez español de la copa del mundo de la cerveza, que al final, fue la persona que me dio el empujoncito final para lanzarme al mundo empresarial cervecero.
Los resultados me sorprendieron ya que, a pesar de ser amante de la cerveza, los amigos y familiares no dejaban de demandármela en cada una de las comidas que realizábamos, y siembre me decían que aumentara la producción ya me quedaba corto...
Internet me dio a conocer la evolución natural de la elaboración de cerveza para consumo casero, abriendo dos posibles vías, la primera, el negocio de los denominados BrewPubs, bares en los que se elabora la cerveza para consumo dentro del propio local, y la segunda, las microcervecerías, fábricas de cerveza de baja tirada donde sus procesos se efectúan de forma artesanal produciendo cervezas de alta fermentación y excelente calidad.
