This Wild Specialty Beer is a vibrant, multi-layered sensory experience that balances sharp acidity with dessert-like indulgence. A dense, opaque purple hue introduces intense aromas of ripe bananas and the unique, earthy dark-berry depth of juneberries. Vanilla and marshmallow provide a pillowy, sweet counterpoint to the lactic tang, creating a nostalgic confectionery profile. On the palate, the interplay of tart fruit and creamy vanilla mimics a fruit-topped gelato. While the wild fermentation provides a crisp, acidic backbone, the adjuncts dominate, resulting in a lush, smoothie-like experience that finishes with a lingering, sweet-tart berry brightness and a velvety mouthfeel.
Appearance. Deep purple to magenta (30+ SRM) with an opaque, smoothie-like clarity. The head is pink-tinted and frothy with moderate retention and thick, creamy lacing.
Aroma. High intensity featuring bold notes of creamy banana and jammy juneberries. Distinct sweet vanilla and sugary marshmallow provide a soft, candy-like secondary layer. Very low malt and no hop aroma; a clean, lactic sourness provides a refreshing acidic lift.
Taste. Initial impression is a burst of tart juneberry and tropical banana. The mid-palate is rich and sweet, characterized by vanilla bean and a soft, marshmallow creaminess. Hop bitterness is negligible. The fermentation character is sharply acidic but balanced by unfermented sugars and fruit pectins. The finish is long and fruit-heavy, lingering with a sweet-tart berry profile.
Mouthfeel. Medium-full to full body with a thick, creamy, and viscous texture. Carbonation is moderate. Alcohol warmth is very low and well-integrated. No perceived astringency; the mouthfeel is smooth and tongue-coating.
