Funky Fluid Gelato: Cocco Fresco is an indulgent Wild Specialty Beer that leans into a smoothie-like profile, delivering a vibrant tropical sensory experience. It is dominated by the lush sweetness of peach and the musky depth of pink guava. Bold passion fruit provides a necessary acidic counterpoint to the dense residual sugars and heavy body of the 18 Plato base. The addition of coconut flakes lends a creamy, confectionery richness that ties the exotic fruit notes together. While the underlying wild fermentation offers a clean lactic tang, the focus remains on the intense, pulp-heavy fruit character and a luxurious, dessert-like finish.

Appearance. Opaque and dense, resembling a fruit smoothie; color is a vibrant coral to pinkish-orange. The head is thick, mousse-like, and pale pink with moderate retention and heavy lacing.

Aroma. High intensity fruit aromatics. Dominant notes of sharp, tropical passion fruit and sweet peach are layered over a rich, creamy coconut backdrop. Pink guava adds a distinctive floral and musky quality. Very low doughy malt; clean lactic acidity is present but subordinate to the fruit.

Taste. Initial impression is an explosion of sweet, pulpy fruit. Saturated flavors of peach and pink guava provide a heavy sweetness, balanced by the bright, tangy punch of passion fruit. Coconut flakes contribute a fatty, dessert-like richness throughout the mid-palate. Bitterness is nearly absent, allowing the fruit and residual sugars to dominate. The finish is long, sweet, and jam-like.

Mouthfeel. Full-bodied and highly viscous with a thick, smoothie-like creamy texture. Carbonation is moderate, providing just enough lift to the heavy fruit pulp. Alcohol warmth is negligible. No astringency.

A Pastry Sour kifejezés leggyakrabban olyan savanyú sörre utal, amelyet szándékosan édesre főznek, és gyakran nem erjeszthető cukrokkal, például dextrózzal és laktózzal készül (ezeket azért nevezik nem erjeszthetőnek, mert az élesztő nem eszi fel őket, és nem alakítja át alkohollá). Ezeket a söröket rengeteg édes összetevő, például gyümölcsök, mályvacukor, keksz, kókuszdió stb. hozzáadásával főzik.
A savanyú sör olyan sör, amelynek szándékosan savanyú, savas vagy fanyar íze van. A hagyományos savanyú sörök közé tartoznak a belga lambic, a gueuze, a flamand vörös sörök, valamint a német gose.
