This Double IPA showcases a sophisticated hop profile driven by generous dry-hop additions of Talus and HBC 630. The sensory experience opens with an intense aromatic layer where sharp citrus meets a distinct blend of sweet red fruit and subtle woody undertones. On the palate, the hop character is assertive yet refined, balancing a firm bitterness against a clean, neutral malt backbone. The interplay of pink grapefruit, berry-like esters, and a hint of cedar-like spice leads into a dry, lingering finish. At 8% ABV, it maintains excellent drinkability, offering a smooth, warming sensation that complements its complex tropical and forest-like hop depth.
Appearance. Gold to light orange-copper in color with a moderate-sized, persistent white head. Displays good clarity, though a very slight haze is acceptable for the style.
Aroma. High intensity hop aroma featuring prominent citrus, sweet red berry, and unique woody or resinous notes. Supported by a clean, neutral, grainy malt character in the background and light fruity fermentation esters.
Taste. Strong and complex hop flavors of grapefruit, red fruit, and subtle pine. Moderately high bitterness that remains smooth and clean. Features a low, unobtrusive grainy malt character. Finishes dry to medium-dry with a lingering, bitter, and fruity hop aftertaste.
Mouthfeel. Medium-bodied with a smooth texture and medium-high carbonation. No harsh hop astringency is present, but a restrained and pleasant alcohol warmth is noticeable.
