This collaborative Belgian Single presents a vibrant, sessionable twist on the monastic tradition. A brilliant pale gold pour leads with an expressive bouquet where Belgian yeast esters meet modern hop intensity. Zesty aromas of grapefruit, lemon, and lime mingle with distinct tropical fruit notes, underpinned by a faint peppery spice and cracker-like malt backdrop. The palate is exceptionally dry and refreshing, balancing a soft, grainy sweetness against a firm hop bitterness that carries the citrus profile through a clean, effervescent finish. It captures the spirit of a classic table beer while delivering the bold, aromatic hop punch characteristic of Full Circle Brew Co’s flagship IPA.
Appearance. Pale straw to light gold (3-5 SRM) with excellent clarity. Features a large, billowy white head with persistent retention and delicate lacing.
Aroma. Moderate to high intensity. Bright citrus notes of grapefruit and lime zest dominate, complemented by tropical fruit and a subtle spicy Belgian yeast character reminiscent of white pepper. Low grainy-sweet malt background with hints of cracker.
Taste. Crisp and highly attenuated. Initial flavors of cracker and light honeyed biscuit are quickly overtaken by a bold hop profile of lemon and tropical fruits. Firm bitterness is accentuated by the very dry finish. Aftertaste lingers with citrus peel and floral yeast phenols.
Mouthfeel. Medium-light body with high, prickly carbonation. Exceptionally smooth and refreshing with no perceptible alcohol warmth, consistent with its sessionable strength.
