This Wild Specialty Beer, a collaboration with Black Lodge Brewery, captures the essence of summer with a vibrant sensory profile. Intense waves of juicy pineapple and zesty grapefruit dominate the aromatics, underpinned by a clean, lactic acidity. On the palate, a sharp bite of sour tropical fruit provides a refreshing edge, perfectly balancing the natural sweetness of the fruit additions. Light-bodied and effervescent, it finishes crisp and dry, leaving a lingering impression of citrus pith and tropical sun. It is a highly refreshing, fruit-forward sour designed for effortless sipping in warm weather.
Appearance. Pale straw to gold (SRM 3-5). Hazy to opaque due to fruit additions and yeast. The white head is moderately thin with low retention, typical of high-acidity styles.
Aroma. High intensity. Immediate, punchy aromas of fresh pineapple and ruby grapefruit. A clean, sharp lactic acidity is present. Malt character is low, suggesting a base of pilsner or wheat, with minimal hop-derived aromatics beyond the citrus-forward profile.
Taste. Initial impression is briskly sour and refreshing. Vibrant flavors of ripe pineapple and tart grapefruit juice are central, supported by a mild cracker-like malt backbone. Bitterness is very low, as the acidity provides the primary structural balance. The finish is short, clean, and quite dry with a lingering tropical fruit ester.
Mouthfeel. Medium-light body with high carbonation that creates a prickly, refreshing sensation. Minimal alcohol warmth is perceptible. A light acidic astringency on the tongue enhances the crispness and drinkability.
