Imperial Stout 12 º
Tourniquet is a monumental Imperial Stout that showcases the mastery of stone-boiling and barrel-aging. The stone-boiling process imparts a unique depth of singed caramel and scorched sugar, which melds seamlessly with the 12% alcohol intensity. Aging in bourbon barrels contributes layers of rich vanilla, toasted oak, and a spirit-forward warmth. The palate is a complex tapestry of espresso, bittersweet chocolate, and dark fruit esters like figs and prunes. This collaboration between Fonta Flora and Jackie O’s delivers a luscious, velvety texture and a lingering, bittersweet finish that balances charred malt character with refined wood tannins.
Appearance. Jet black and completely opaque (40+ SRM). Pours with a thick, creamy, deep tan head that shows moderate retention. High viscosity is evident by the visible legs that coat the glass upon swirling.
Aroma. High intensity with a rich blend of dark chocolate, espresso, and black licorice. The bourbon barrel influence is prominent, offering notes of vanilla bean, charred oak, and a hint of coconut. Underlying dark fruit esters resemble raisins and dried plums.
Taste. Intense initial impression of dark cocoa and singed caramel from the stone-boiling. Moderate to high hop bitterness is quickly balanced by a thick malt sweetness. Flavors of toasted bread, molasses, and bourbon-soaked oak dominate the mid-palate. The finish is long and warming, with a lingering espresso-like roast and wood-derived complexity.
Mouthfeel. Full-bodied and exceptionally chewy with a velvety, luscious texture. Carbonation is low, enhancing the creamy mouthfeel. A smooth, noticeable alcohol warmth is present but remains well-integrated, avoiding any harshness.

"Brewed with water from our wells along with 49% local ingredients and crafted in collaboration with our longtime friends at Jackie O’s Brewery of Athens, Ohio. Mashed with a rich base of local barley malts and injected with a decadent blend of the finest caramel, chocolate and roasted malts. Boiled exclusively in our open-top oak foeder with hot granite rocks, gathered from a quarry in McDowell County, inside the flames of local oak logs. This is the magnificence of steinbier. The rocks are pulled from the flames, dipped into the wort and with a sensational sizzle, a mind-bending amount of caramelization is achieved.
Fermented with our preferred stout yeast strain for an unbelievably thick body and luxurious mouthfeel. Transferred into freshly dumped, extremely wet and hand-selected bourbon barrels, where this beer conditioned for 15 months.
Though we have conceived and concocted dozens of stein beers, this is our very first imperial stout brewed in that style. Known for their robust barrel aged imperial stout program, Jackie O’s seemed like a natural fit to mark the occasion."
