Raging Bitch is a vibrant Specialty IPA that masterfully fuses aggressive American hop character with expressive Belgian fermentation. It presents a bold sensory profile defined by sharp grapefruit and resinous pine, hallmarks of its American IPA inspiration. This hop intensity is layered over a complex foundation of Belgian funk derived from the El Diablo yeast strain, which contributes spicy phenolics and exotic fruit esters reminiscent of pear and banana. With a brilliant golden glow and a persistent white head, the beer delivers a sharp, dry finish and a noticeable alcohol warmth, striking a polarizing yet sophisticated balance between New World fruitiness and Old World yeast complexity.
Appearance. Deep gold to light amber in color (8–12 SRM). Brilliant clarity with a large, persistent white head that leaves significant lacing on the glass.
Aroma. High intensity hop aroma featuring prominent resinous pine and pithy grapefruit notes. The Belgian yeast influence is equally high, providing spicy clove-like phenols and a bouquet of fruity esters including pear, bubblegum, and banana. Low bready malt sweetness sits in the background.
Taste. Initial impression is a punch of citrus peel and pine needles followed by a medium-high, clean hop bitterness. The malt flavor is low, presenting as light honey or bread crust. Significant fermentation character adds peppery spice and tropical fruit complexity. The finish is very dry and lingering, with a crisp, bitter aftertaste and a slight alcohol edge.
Mouthfeel. Medium-light body with high, effervescent carbonation that provides a prickly sensation on the tongue. Noticeable but well-integrated alcohol warmth is present. Smooth overall with no harsh astringency.
