This Brett Beer is a complex Wild Ale that captures a transatlantic marriage of English wild character and California barrel-aging expertise. Aged in French Oak Foeders, it layers the bright, tart essence of Sunrise Raspberries over a youthful Bretta Weisse base. The addition of French candied violet petals introduces a distinct botanical spice, while the proprietary Somerset Wild yeast imparts a rustic, expressive funk. Expect a sensory journey of ripe berries and delicate floral perfume, grounded by earthy yeast nuances and a remarkably dry, nuanced finish that highlights the intricate interplay between fruit, wood, and wild fermentation.
Appearance. Luminous ruby-pink to soft reddish-orange (SRM 10-14). Pours with a moderate, pink-tinted head that displays fair retention and fine lacing. Clarity shows a slight haze typical of fruit-infused wild ales.
Aroma. High intensity with a primary focus on fresh Sunrise Raspberries and a floral, perfume-like quality from French candied violet petals.
