Fenetra Signata is a rustic Saison that bridges traditional farmhouse complexity with bold modern influences. This vibrant ale undergoes three months of aging in wooden barrels before conditioning on a massive quantity of fresh peaches. The sensory profile is dominated by the succulent, juicy aroma of ripe stone fruit and the bright, tropical character of New World hops, underpinned by a peppery yeast strain. On the palate, the fruit presence is lush and expressive, supported by a grainy malt base and integrated wood tannins. A light funkiness emerges in the finish, accompanied by high carbonation and a characteristically dry, spicy linger.
Appearance. Deep gold to pale orange (7-9 SRM); hazy and unfiltered with visible effervescence; thick, long-lasting ivory head with excellent lacing.
Aroma. High intensity; dominant fresh peach and apricot notes meld with tropical and citrus New World hops. Background of cracked black pepper, light clove, and a rustic, woody mustiness from barrel aging.
Taste. Initial burst of succulent peach nectar followed by spicy yeast phenolics. Low to moderate grainy malt sweetness is quickly overtaken by a firm hop bitterness and wood-derived tannins. The finish is very dry with a lingering peppery aftertaste and a touch of wild funk.
Mouthfeel. Medium body with a smooth, slightly creamy texture from the fruit; very high carbonation provides a prickly, effervescent scrub; subtle, well-integrated alcohol warmth.
