Fenetra Charlotta is an elegant, mixed-fermentation Saison that bridges the gap between rustic farmhouse tradition and intensive fruit maceration. This 2023 vintage underwent a two-year maturation in wooden barrels with a dedicated Brettanomyces culture, developing a profound wild character. The addition of fresh sour cherries at a rate of 470kg per 1000l defines the profile, imparting a vivid, tart fruitiness and deep complexity. Expect a seamless integration of leather and earthy funk with the bright, acidic snap of the fruit. The finish is exceptionally dry and vinous, displaying the highly attenuated nature of a classic Farmhouse Ale transformed by time and wood.
Appearance. Deep ruby to garnet red with vibrant pink highlights; moderate, fine-beaded pale pink head with fair retention; slightly hazy appearance from the heavy fruit maceration and lack of filtration.
Aroma. High intensity; dominant notes of tart sour cherries and cherry pits are layered over a complex Brettanomyces profile of leather, horse blanket, and hay. Underlying spicy phenolics resembling black pepper and a faint, toasted oak vanillin complement a subtle, grainy malt backdrop.
Taste. Initial impression is sharply tart and refreshing; intense sour cherry flavor moves into a rustic, grainy malt mid-palate. High attenuation leads to a bone-dry finish where hop bitterness is low, replaced by a firm acidic balance and light wood tannins. Lingering aftertaste of cherry skins and earthy funk.
Mouthfeel. Medium-light body; high, effervescent carbonation; noticeable acidic prickle on the tongue with a light, well-integrated alcoholic warmth; subtle tannic astringency adds structure without being harsh.
