Elder Dandy is a complex, barrel-aged Cyser that captures a Vermont spring landscape. This blend of raw honey and apples is elevated by the inclusion of raw birch sap, providing a distinct mineral undercurrent. Floral aromas of elderflower and fresh dandelion mingle with the herbal, slightly bitter notes of yarrow and the sharp, citrus-like tartness of sumac. Two and a half years of barrel aging softens the wild apple character, while a secondary bottle fermentation with fresh apple juice lends a bright, effervescent finish. It is a harmonious, dry expression of terroir and botanical depth, balancing rustic honey notes with sharp, wild fruit.
Appearance. Deep gold to amber hues with a light, persistent white mousse from bottle conditioning. Exhibits slight hazy brilliance with fine, active carbonation and modest lacing.
Aroma. High intensity; prominent floral notes of elderflower and dandelion pollen balanced by earthy, herbal yarrow. Crisp, fermented apple skin and honeyed sweetness are complemented by a sharp, lemony sumac acidity and subtle oak vanillin from extended barrel aging.
Taste. Initial tartness from wild apples and sumac gives way to a complex herbal middle featuring yarrow and dandelion. Honey provides a lean, floral backbone rather than cloying sweetness. Birch sap adds a subtle, stony mineral quality. Finishes bone-dry with lingering apple tannins and a soft, floral aftertaste.
Mouthfeel. Medium-light body with a prickly, high carbonation that cleanses the palate. Very low astringency from botanicals and fruit skins; smooth, well-integrated profile with no discernible alcohol warmth.
