In Bloom is a vibrant American IPA that captures the classic West Coast essence through a modern lens. An expressive dry hopping regimen featuring Mosaic, Simcoe, and Amarillo drives a bold sensory experience defined by layers of ripe tropical fruit and sharp herbaceous resin. The Extra Pale Ale and Crystal malts provide a lean, golden-orange foundation that allows the hops to remain the focal point. Expect a clean fermentation profile that highlights the interplay between citrus brightness and a firm, persistent bitterness. The addition of flaked oats lends a subtle smoothness to an otherwise crisp, decidedly dry, and refreshingly bitter finish.

Appearance. Deep golden to pale orange (SRM 7-9) with brilliant clarity and a slight sparkle. It is topped by a thick, creamy white head that shows excellent persistence and leaves intricate lacing.

Aroma. High intensity hop aroma featuring prominent tropical fruit notes of mango and passionfruit, complemented by a resinous, piney, and slightly herbal character. A low, clean, grainy maltiness provides a supportive base with a very clean fermentation profile.

Taste. The palate is hop-forward with intense flavors of stone fruit, citrus, and resin. A medium-high bitterness is immediate and assertive, balanced by a low, clean malt character featuring hints of toasted grain. The finish is dry and crisp, with a lingering, clean bitterness and hoppy aftertaste.

Mouthfeel. Medium-light to medium body with a smooth, slightly creamy texture. Carbonation is moderate-high, providing a crisp mouthfeel. No harshness is present, though a very light, well-integrated alcohol warmth is detectable.
