Elmeleven Fractal (w. 3 Sons)

This Imperial Stout presents a decadent bake shop profile, blending barrel-aged depth with fresh, roasty character. The aroma is dominated by a complex trio of vanilla beans from Uganda, Madagascar, and Papua New Guinea, creating a lush, creamy foundation. Layers of tonka beans provide an almond-like nuttiness, while warm cinnamon and herbal cardamom provide a spicy counterpoint to the deep caramelized sugar. On the palate, a velvety sweetness carries notes of dark chocolate and roasted malts, balanced by the vinous dried fruit and caramel of the barrel blend. It is a viscous, indulgent sipper that harmonizes intense spices with a warming, sticky finish.
Appearance. Jet black and opaque (SRM 40+). Pours with a dense, dark tan head with moderate retention and significant lacing. High viscosity is evident through thick legs coating the glass.
Aroma. High intensity and deeply complex. Strong notes of rich dark chocolate and roasted coffee are layered with an aromatic spice cabinet of cinnamon and herbal cardamom. The three-origin vanilla blend provides a heavy, floral, and creamy sweetness, while the tonka beans add hints of marzipan. Substantial barrel character contributes aromas of toasted oak, caramel, and dark dried fruits like raisins and prunes.
Taste. The initial impression is intensely sweet and decadent, featuring caramelized sugar and a trio of vanilla varieties. The mid-palate reveals a blend of bittersweet chocolate and roastiness from the fresh stout, alongside spicy peaks of cinnamon and cardamom. Barrel-aging imparts depth through notes of caramel, oak, and dark fruit. The balance leans towards sweetness, though roast and hop bitterness provide enough structure to prevent it from being cloying. The finish is long, lingering, and sticky.
Mouthfeel. Full to very full-bodied with a thick, chewy, and syrupy texture. Carbonation is low to moderate, enhancing the velvety mouthfeel. A significant, smooth alcohol warmth is present, reflecting the strength, with no harshness or astringency.

Together with 3 Sons we schemed this up…
Blended? We blended two beers aged in two different barrels together with a new batch of thick and sweet imperial stout… for this project the perfect match of deep caramel dried fruit barrel aged character, and fresh chocolate roasty notes and sweetness!
Bake Shop? Yes, it’s loaded with tonka beans, two origins of cinnamon, cardamom and home cooked caramelized sugar… on top of that, aged on a no shy amount of three origins of vanilla beans from Uganda, Madagascar and Papua New Guinea. The levels are perfectly balanced – nothing is too much, nothing is too little.
Expect this to be a real sipper with layers and layers of flavours and spices, sweet and sticky that surprises you throughout with balanced barrel character as well as roastiness from the fresh imperial stout.
