Poppin is a vibrant and punchy Wild Specialty Beer that evokes the spirit of a light kriek in a highly sessionable 3.8% package. It leads with an expressive burst of sweet-tart cherry, balanced by the bright, refreshing acidity of a wild fermentation. The profile is defined by its clean, fruit-forward character, offering a crisp alternative to heavier sour ales. On the palate, the cherry presence is dominant but well-integrated with subtle funk and a sharp, drying finish. This zesty, ruby-hued ale is crafted for effortless drinking, providing a sophisticated yet accessible sensory experience driven by its lively fruit profile.

Appearance. Vivid ruby to deep pink color (SRM 10-15 from fruit). The head is light pink, moderate in height but showing quick dissipation typical of acidic wild ales. Clarity is slightly hazy due to the heavy fruit addition.

Aroma. High intensity aromatics of fresh, tart cherries and cherry skins. A distinct lactic acidity provides a sharp edge, complemented by subtle earthy funk and a hint of sourdough from the wild fermentation. No significant hop aroma or malt sweetness is present.

Taste. The initial impression is a sharp, mouth-watering tartness followed immediately by a rich wave of cherry flavor. The sweet-tart character is well-balanced; while the fruit feels juicy, the fermentation has left the beer dry. Low to no hop bitterness. The finish is crisp and short with a lingering cherry skin astringency.

Mouthfeel. Light-bodied and effervescent with high carbonation that scrubs the palate. No alcohol warmth is detected. A very slight tannin-driven astringency from the fruit enhances the dry perception without being harsh.
