Soured with a house Lactobacillus blend, it presents a bright, lemon-esque lactic acidity that dominates the profile. The aroma is uniquely inviting, featuring the cooling, subtly sweet scent of spearmint paired with the earthy, aromatic zing of fresh ginger. On the palate, a light, crackery malt base provides a foundation for the interplay of zesty citrus and botanical spice. Appearance. Very pale straw color (2 SRM) with a slight haze. It carries a large, dense white head that exhibits poor retention due to high acidity and low protein levels.
Aroma. High intensity of clean lactic sourness with distinct lemon-like fruitiness. A refreshing, cool spearmint character provides a subtly sweet herbal nose, while fresh ginger adds a sharp, earthy, and spicy aromatic layer over a faint, bready pale malt base.
Taste. Initial impression is a sharp, clean lactic tartness. A pale fruit character, primarily lemon, is balanced by the cooling sweetness of spearmint and the spicy, warming snap of fresh ginger. The malt flavor is subtly crackery and grainy. It finishes quite dry and crisp with no hop flavor or bitterness.
Mouthfeel. Light-bodied with high, effervescent carbonation. The mouthfeel is defined by a crisp acidity and a unique, subtle spice warmth from the ginger, though it remains highly refreshing and sessionable.
