The aroma is highly expressive, offering a bouquet of ripe orchard fruit underpinned by the subtle, rustic phenols and earthy undertones characteristic of traditional bittersweet varieties. Bracingly dry and sparkling, the palate reveals a complex interplay between firm tannins and a bright, refreshing acidity. The clean fermentation highlights the organic fruit's purity, resulting in a crisp, lingering finish that embodies the terroir of a West Country orchard.
Appearance. Brilliant gold with a lively, fine-bubbled effervescence and a quick-fading white collar; excellent clarity reflecting its organic quality.
Aroma. Moderate to high intensity of fresh apple and fruity esters; distinct earthy and slightly smoky phenolic notes from Yarlington Mill and Dabinett; no diacetyl or acetic character present.
