Bad Behaviour is a bright and punchy micro-interpretation of an American IPA. Despite its light stature, it delivers an intense sensory profile driven by Incognito Mosaic in the whirlpool and a generous Citra dry hop. The aroma is a vibrant burst of tropical mango, citrus zest, and sweet melon, layered over a lean, crackery malt base. On the palate, refreshing notes of grapefruit and stone fruit are met with a firm, clean bitterness that belies its low gravity. It finishes crisp and dry, making it an effortlessly drinkable session ale that captures the essential hop-forward spirit of the style.
Appearance. Pale gold to light amber (approx. 4-6 SRM). Pours with a medium-sized, brilliant white head showing good persistence and fine lacing. Clarity is clear to slightly hazy.
Aroma. High intensity hop aroma featuring prominent notes of tropical fruit (mango, papaya), citrus (grapefruit), and a touch of blueberry. Low, clean, grainy maltiness provides a neutral backdrop. Fermentation is clean with very low fruity esters.
Taste. Initial impression is crisp and hop-forward. Medium-high hop flavors of mango, melon, and citrus zest dominate. Malt flavor is low, presenting as toasted crackers. Bitterness is firm but not harsh, providing a balanced, hoppy bite. The finish is dry and clean with a lingering hoppy aftertaste.
Mouthfeel. Medium-light body with a smooth texture. Carbonation is medium-high, providing a lively sensation on the tongue. No detectable alcohol warmth or astringency.
