This Belgian Tripel presents a sophisticated interplay of yeast-driven complexity and balanced malt depth. A base of Pilsen malt provides a soft, grainy-sweet foundation, subtly enhanced by specialty Belgian malts that contribute faint notes of biscuit and caramel. The sensory profile is dominated by a vibrant bouquet of pear and orange esters, punctuated by a delicate hint of banana. Traditional Trappist yeast characteristics of clove and nutmeg are masterfully elevated by a thoughtful addition of cardamom, adding a cooling, herbal spiciness. Despite its 9% ABV, the beer remains remarkably drinkable, finishing dry with a lingering, effervescent, and spicy-fruity aftertaste.

Appearance. Light golden color (approximately 5-6 SRM). Exhibits brilliant clarity and is topped by a long-lasting, creamy, rocky white head that leaves dense Belgian lacing on the glass.

Aroma. High intensity aromatic profile. Grainy-sweet Pilsen malt and light bready-biscuit notes support a complex layer of fruity esters including pear and orange peel. Pronounced spiciness from Belgian yeast phenols—clove and nutmeg—is further accentuated by the distinct, perfumy herbal aroma of cardamom. Low floral hop notes and a soft, well-integrated alcohol presence.

Taste. The initial impression is one of deceptive strength and dryness. Soft grainy-sweetness from Pilsen malt blends with light biscuit and caramel flavors. Mid-palate reveals layers of orange, pear, and a touch of ripe banana. Bitterness is moderate but firm enough to counter malt sweetness effectively. Spicy notes of clove and cardamom dominate the profile through to a very dry, crisp finish with a lingering, spicy aftertaste.

Mouthfeel. Medium-light body that feels surprisingly nimble for the high gravity. Carbonation is high and effervescent, creating a creamy texture. Alcohol warmth is noticeable but smooth and well-integrated, providing a gentle glow without harshness.
