This 15-month bourbon barrel-aged Doppelbock transforms a traditional Maibock base into a complex, spirit-forward masterpiece. At 10.6% ABV, it presents a rich tapestry of bready, toasty malt typical of German base malts, now interwoven with significant oak influence. The extended aging introduces lush vanilla and toasted coconut notes, while the bourbon barrel contributes a sophisticated spirituous warmth. Despite its power, the beer maintains a smooth, clean lager fermentation profile, balancing the residual sweetness of the malt with the dry, tannic structure of the wood. Appearance. Deep amber to light copper with brilliant clarity. Pours with a dense, creamy, off-white head that shows moderate persistence despite the high alcohol content, leaving fine lacing.
Aroma. High intensity malt-forward aroma featuring toasted bread and light honey. Dominant bourbon-driven notes of rich vanilla, charred oak, and a hint of coconut. Clean lager profile with no hop aroma, complemented by a noticeable but well-integrated spirituous alcohol character.
Taste. Initially very rich and malty-sweet, showcasing toasted grain and bready flavors. The mid-palate is dominated by bourbon barrel influences of vanilla, caramel, and dry oak tannins. Bitterness is low, allowing the malt and spirit character to lead. Finishes smooth with a lingering warmth and a refined sweetness that never feels cloying.
Mouthfeel. Full-bodied and viscous with a smooth, velvety texture. Carbonation is moderate-low. Significant but non-burning alcohol warmth is present, reflecting the 10.6% strength.
