Thomaxolotl is a sophisticated Smoked Cherry Porter that expands the boundaries of the traditional English Porter style. It presents a rich mahogany hue with deep ruby glints, releasing an aromatic bouquet of campfire smoke layered over dark chocolate and tart red cherries. The palate is defined by a sturdy foundation of biscuity malt, reminiscent of Maris Otter, and toasted toffee, which provides a sweet counterpoint to the savory smoke and vinous fruit notes. At 6.5% ABV, the beer offers a velvety, medium-full body that carries the complex interplay of roasted cocoa and stone fruit into a lingering, harmonious finish.
Appearance. Deep mahogany to dark brown with brilliant ruby highlights when held to the light. Crowned by a dense, tan, creamy head with moderate retention and delicate lacing.
Aroma. Moderate intensity of woodsmoke and savory peat balanced by high malt notes of milk chocolate, toffee, and toasted bread. Pronounced esters of tart dark cherry and subtle plum, with a very low earthy hop presence.
Taste. Initial impression of sweet chocolate and caramel malt, quickly followed by a moderate smoky character and the bright, slightly acidic tang of cherries. Hop bitterness is medium-low, providing just enough balance to the malt sweetness without being assertive. The finish is medium-dry with lingering notes of roasted grain, smoke, and stone fruit.
Mouthfeel. Medium-full body with a smooth, creamy texture. Carbonation is moderate, and there is a gentle, well-integrated alcohol warmth that exceeds the standard style constraints.
