This spontaneous Brett Beer presents a vibrant sensory tapestry woven from extensive oak aging and a quartet of stone and bramble fruits. Deeply aromatic, it expresses the bright, acidic punch of Montmorency and Morello cherries alongside the jammy depth of black and red raspberries. The spontaneous fermentation yields complex esters of apricot and stone fruit, layered over a rustic base of wet hay and dusty cellar funk. On the palate, the fruit intensity provides a sharp, refreshing tartness that cuts through the subtle vanillins of the oak. It finishes bone-dry and effervescent, showcasing a masterful balance of wild complexity and pure fruit essence.
Appearance. Intense purple to deep ruby red; hazy to nearly opaque from significant fruit solids. Pours with a moderate pinkish-hued head that shows fair retention and leaves light lacing.
Aroma. High intensity. Dominant aromas of tart Montmorency cherries and floral red raspberries. Secondary notes of earthy black raspberry and a distinct wild funk—reminiscent of damp earth, leather, and aged hay. Subtle toasted oak and vanilla undertones emerge as it warms, with no detectable hop aroma.
Taste. A sharp, clean tartness leads, followed by a burst of mixed berry and cherry flavors. The Morello cherries provide a deep, vinous character, while the raspberries add a bright, jammy quality that is quickly attenuated by the yeast. Very low bitterness. The finish is exceptionally dry and crisp with a lingering essence of fruit skins and a soft, woody tannin from the oak.
Mouthfeel. Medium-light body with high, prickly carbonation that enhances the perceived acidity. Very low alcohol warmth despite the 7% ABV. Slight tannin-driven astringency from the fruit skins and oak barrel aging provides structure without harshness.
