De Dolle Brouwers
De Dolle Brouwers – i birrai pazzi – è un birrificio belga situato a Esen, nell’area comunale di Diksmuide, nelle Fiandre Occidentali. Nato nel 1980 grazie agli appassionati (e pluripremiati) homebrewer Kris e Jo Herteleer, ai quali si aggiunge Romeo Bostoen, De Dolle Brouwers riprende l’attività sulle ceneri del birrificio fondato nel 1835 da Louis Nevejan, che in seguito passò da altri proprietari sino alla chiusura avvenuta nel 1979.
Anche l’assetto societario cambia nel tempo, vedendo l’uscita di scena di alcuni componenti e l’ingresso di forze fresche, sino alla stabilizzazione nel 2006, anno in cui la proprietà passa per le uniche mani di Kris Herteleer, coadiuvato dalla moglie Els de Muelenaere. Le birre di De Dolle sono caratterizzate dal tenore alcolico e dall’estro del birraio, che trasmette le proprie doti artistiche (Kris è pittore e architetto, oltre che birraio) alle sue creature.
La prima birra di De Dolle è la Oerbier, a cui seguono arabier , Boskeun , Dulle Teve , Stille Nacht , Stout e Reserva. Nel tempo il nome di De Dolle si è fatto conoscere in tutto il paese, sino a valicare i confini nazionali, soprattutto con la Stille Nacht, diventata un vero e proprio culto tra gli appassionati di birra di qualità.

Bij De Dolle Brouwers brouwen zij bieren met een lange geschiedenis en dat op een ambachtelijke wijze.
Hun eerste bier is het zogenaamde Oerbier in 1980. En dat na de overname van een leegstaande brouwerij te Esen bij Diksmuide. Dit bier kwam er nadat zij eerst thuis hadden geëxperimenteerd in de wastobbe, met enkel natuurlijke ingrediënten en met nagisting op de fles. Sinds 1980 hebben zij hun assortiment stelselmatig kunnen uitbreiden met heerlijke brouwsels zoals Arabier, Boskeun, Dulle Teve, Stille Nact, Stout en Reserva. De productie is stabiel rond de 1200 hectoliter per jaar.
De naam De Dolle Brouwers komt overigens van een fietsclubje ‘De Dolle Dravers’ dat maximaal uit 4 leden bestond. Dit waren de twee broers Herteleer, Dirk Coussée en Bernard Veranneman. Het clublokaal was een huisje dat vroeger dienstdeed als duivenhok, later als washuis. Bij de fietsers was er niet alleen een parate kennis van afstanden en hellingen, maar ook van de regionale biercultuur: De Dolle Brouwers was geboren.

A nostro avviso è la migliore birra Natalizia proveniente dal Belgio..ma non solo! Una bottiglia che gli appassionati e collezionisti tengono da parte e la fanno invecchiare, una birra che può solamente migliorare.
Colore ambrato intenso, ben equilibrata al gusto tra note dolci dello zucchero candito e l’amaro dei luppoli, al naso invece sono evidenti le note fruttate di canditi e pera.
E’ la birra con la più alta densità di qualsiasi altra birra Belga (ben 27 grado plato), ottenuta dopo ben 5 ore di bollitura, con malto chiaro e zucchero candito in cottura. Il Luppolo Nugget e il dry hopping conferiscono un’amarezza in più per bilanciare l’estrema dolcezza dovuta all’intensità. Il triangolo gustativo si completa con una certa acidità della fermentazione che pulisce la bocca.

What a beautiful name for a Christmas beer, by the way, if we do say so ourselves. And with a beautiful name comes an exclusive beer, from which a little more can be expected. A little more, that also means one of the heaviest densities of the wort: 22°PL.
Our craft brewhouse can handle a large deposit of malt. We brew one brew a day, boiling in a copper kettle with direct gas fire and cooling in the cooling vessel, also in copper.
COOLING IN BAUDELOT COOLER
Cooling takes place in a Baudelot cooler and fermentation takes place in open copper vats. The lagering lasts at least a month and the beer is secondary fermented in the bottle. The bottling date of this beer is stated on the capsule.
