De Cam Oude Geuze presents a masterfully blended profile of one- and two-year-old lambics, resulting in a Gueuze that emphasizes dry structural complexity over biting acidity. The sensory journey begins with an inviting bouquet of horse blanket, aged leather, and dried hay, supported by subtle notes of lemon rind and rhubarb. On the palate, it delivers a notably dry, almost savory character with a refined wood-tannin bitterness and a softer lactic sourness than many of its peers. This spontaneous fermentation showcases a distinct earthy depth and a crisp, lingering finish that reflects the blender’s preference for a balanced, less acidic Gueuze.
Appearance. Deep golden color (5–6 SRM) with brilliant clarity. Features a thick, mousse-like white head with exceptional retention and high effervescence.
Aroma. High intensity funk including barnyard, leather, and horse blanket. Moderate lactic sourness is balanced by lemon zest, green apple, and a light honeyed wheat malt character. No hop aroma; faint aged oak notes.
Taste. Complex tartness with layers of citrus and pome fruit. Low grainy wheat flavor. Noticeable aged hop bitterness and wood tannins provide structure. Finishes bone-dry with a lingering earthy and funky aftertaste.
Mouthfeel. Medium-light body with a soft, velvety texture despite high carbonation. Puckering acidity is present but integrated; no significant astringency.
