Cyclic Beer Farm

Temperance is a delicate Brett Beer that belies its sessionable 3.7% ABV with deep complexity derived from aging on wine and cider lees. This wild ale opens with a rustic perfume of sun-dried hay and subtle barnyard funk, layered over bright notes of white grape and orchard fruit. On the palate, it is exceptionally dry and effervescent, showcasing a crisp interplay between lean malts and a light vinous tang from the No Control lees. The finish is clean and refreshing, leaving behind a faint whisper of oak and a lingering, tart cider-like snap that invites another sip.

Appearance. Pale straw to light gold (3–4 SRM). Features a slight haze characteristic of wild fermentation and a moderate white head with fair retention and light lacing.

Aroma. Moderate to high intensity. Dominated by fruity Brettanomyces esters resembling pineapple and apricot, mingled with earthy funk such as wet hay and leather. The wine and cider lees contribute distinct notes of fermented apple skin and white wine must.

Taste. Initial impression is bone dry and lean. Malt flavor is low, providing a cracker-like backdrop for the fermentation character. Hop bitterness is low, allowing a light acidity to provide balance. Flavors of green apple, pear, and a touch of tart grape dominate the mid-palate. The finish is quick and very dry with a lingering rustic, funky aftertaste.

Mouthfeel. Light body with high carbonation that creates a spritzy, champagne-like texture. No alcohol warmth is perceived. Very low astringency despite the barrel aging and lees contact.
